With over 12 years of global culinary experience, Chef Leroy has sharpened his skills in some of the world’s most exciting kitchens from the vibrant culinary hubs of China, Hong Kong, and Singapore to the prestigious Ritz-Carlton in the USA and acclaimed Hatted restaurants in Australia. He helped propelling Shokunin onto Canada’s Top 100 Restaurants list and securing the title of Calgary’s Best Restaurant by Avenue Magazine for three consecutive years. His journey has included working alongside Michelin-starred Chefs and legends from the World’s 50 Best Restaurants. Most recently, at Maven, Chef Leroy made his mark by redefining the brunch experience and launching Hapunan: Calgary’s first Filipino Omakase - blending tradition and innovation to tell bold, soulful stories through food. Now with The Dorian Hotel, Calgary’s first Michelin Key Hotel, where he continues to push culinary boundaries and craft memorable dining experiences.
